Savor develops dairy-free butter from CO2 and Hydrogen

California: Savor, a startup based in California founded by Microsoft co-founder Bill Gates, has successfully developed butter using only carbon dioxide and hydrogen.

Savor has patented a thermochemical process to create fat molecules for butter, leading to a dairy-free alternative to products like milk, butter, cheese, and ice cream.

This alternative not only maintains the original texture but also closely resembles the taste.

Moreover, this air-based butter production process does not emit greenhouse gases and requires no agricultural inputs.

Remarkably, it uses less than a thousandth of the water required for traditional agriculture, resulting in significantly lower carbon impacts compared to animal-derived fats.

The taste of this dairy-free butter is also so similar to traditional butter that distinguishing between the two is quite challenging.

However, the company still faces several challenges that must be addressed before bringing this butter to market.
